Eggplant caviar
Ingredients
● TERANA ground black pepper ● 1 tablespoon TERANA cilantro ● 1 sweet onion finely chopped ● 1 medium red pepper, cut into squares ● 3 cloves of garlic, finely chopped ● 3 large eggplants cut into not very large cubes ● 125 ml of crushed tomato ● 15 ml of tomato concentrate ● Vegetable broth or water ● Fresh cilantro or crushed parsley ● Fresh dill (optional) ● Extra virgin olive oil ● Salt
Preparation
1.Heat two tablespoons of oil in a frying pan and sauté the onion along with a pinch of salt. Add the pepper and cook for 10 minutes, then add the cilantro and stir for 2 minutes.
2.Add the eggplant, lightly salt and pepper and stir over high heat. Add the crushed tomato, the tomato paste and a little water or broth - very little. Stir until it boils, then lower the heat and let it cook slowly for 1 hour.
3.Stir from time to time and add a little more liquid as needed.
4.*It should have a honeyed consistency, but not watery. Always make sure it doesn't stick to the bottom and at the end of cooking add a handful of chopped parsley or cilantro.
5.At the end, adjust the salt and serve with fresh dill.
