Lentil ceviche
Ingredients
TERANA ground black pepper to taste
3 cups cooked lentils
1 bunch of fresh cilantro
1 red onion
6 tomatoes
4 lemons
2 serrano chili peppers
1/4 cup
Preparation
1. Finely chop the tomato, onion, cilantro and seeded serrano chile.
2. In a bowl, mix the cooled lentils with the other ingredients.
3. Add the lemon juice, olive oil and salt and pepper to taste.
4. Place in the fridge and let sit for 10 minutes.
5. Serve with some bread or corn toast.
TipTERANA: You can add slices of avocado for garnish.
