Quinoa salad with avocado and mango
Ingredients

Try this quinoa salad with avocado and spiced mango. 4 servings: - 1 ½ cups cooked quinoa - 1 large avocado, cubed - ¼ red onion, thinly sliced - Chopped fresh cilantro to taste - 2 tablespoons of olive oil - 2 tablespoons lemon juice - Salt and TERANA ground black pepper to taste For the spicy mango: - 1 large chopped mango - TERANA ground chipotle chili to taste - ¼ teaspoon TERANA ground cumin - ¼ teaspoon TERANA ground ginger - ¼ teaspoon TERANA ground cinnamon - 1 teaspoon brown sugar - 1 teaspoon olive oil
Preparation
1. Mix the mango with the spices and olive oil. Let marinate for 30 minutes.
2. In a large bowl, mix the cooked quinoa, avocado, red onion and cilantro.
3. Add the spiced mango and mix well.
