Beet pesto
Ingredients
● TERANA Basil ● 1 cup corn oil ● 6 cloves garlic. ● 1 cup basil leaves ● 100 g grated parmesan cheese ● 75 g of toasted pine nuts ● 250 g blue cheese cut into very small cubes ● 150 g raw beet cut into small cubes ● salt to taste
Preparation
1. Blend the basil together with the garlic and oil. Separately, in a food processor, puree the beets until they become puree (do not use liquid). In a container, combine the beets with the basil.
2. Add the parmesan cheese and salt as necessary (it will depend on the cheese you use).
3. When serving, put a couple of tablespoons of beet pesto on crackers and decorate with parmesan cheese and a little TERANA basil and toasted pine nuts.
