Red fruit cheesecake with cardamom

🍓🍇 This cardamom berry cheesecake will be the center of attention at your Valentine's Day celebration.

For the crust: - 200g Maria biscuits - 100g melted butter For the filling: - 500g cream cheese - 150g sugar - 3 large eggs - 1/2 teaspoon TERANA ground cardamom - 250g mixed berries (strawberries, raspberries, blueberries)

1. Crush the biscuits until they have a sandy texture. Mix them with the melted butter until you have a smooth dough. Press this mixture into the bottom of a springform pan lined with baking paper. Set aside in the refrigerator while you prepare the filling.
2. In a large bowl, beat the cream cheese and sugar until you have a soft, fluffy cream. Add the eggs one at a time, beating well after each addition. Stir in the TERANA ground cardamom.
3. Pour the cheese mixture over the biscuit base. Bake in a preheated oven at 160°C for 45-50 minutes, or until the center is set but slightly jiggly.
4. Let the cheesecake cool completely in the off oven with the door ajar. Once cool, refrigerate for at least 4 hours. Before serving, decorate with the berries.

For a smoother, creamier texture, you can sift the cream cheese before beating it.
