Carrot cake without sugar or flour!
Ingredients
● 2 ½ teaspoons of TERANA cinnamon
● ½ teaspoon TERANA ginger
● ½ teaspoon TERANA nutmeg
● 2 cups oat flakes
● 1 cup oat flour
● 2 tablespoons cornstarch
● 2 ½ teaspoons baking powder
● ¼ teaspoon salt
● 1 ¾ cup almond milk
● 2 eggs
● 1/3 cup honey
● 1 tablespoon vanilla extract
● ¾ cup peeled and grated carrot
● ½ cup finely chopped walnuts
Preparation
1. Start by preheating the oven to 180°C and greasing a baking pan (20cm x 20cm).
2. Mix the oat flakes with the oat flour (if you can't find oat flour, you can grind some oat flakes), add the cornstarch, salt, baking powder, ginger, cinnamon and TERANA nutmeg. .
3. Separately, beat the eggs with the honey until they double in volume and turn a light yellow color; Add a little vanilla essence and almond milk.
4. Add the egg mixture to the oat mixture in three parts and beat thoroughly after each addition.
5. Now add the carrots and walnuts, then pouring the entire mixture into your previously greased mold.
6. Bake at 180°C for 40 minutes or until a toothpick inserted in the center comes out clean.
7. Once cooked, let it cool completely before unmolding.
