- 4 diced chicken breasts - 1 chopped onion - 2 minced garlic cloves - 1 can of coconut milk - 2 tablespoons red curry paste - 1 teaspoon TERANA ground cumin - 1/2 teaspoon coriander powder - 1/4 teaspoon TERANA ground cardamom - Salt and pepper to taste - 1/2 cup toasted and chopped cashews - Cooked basmati rice for garnish
1. In a large pot, heat a little oil and sautƩ the onion and garlic until golden brown.
2. Add the chicken and cook until golden brown on all sides.
3. Stir in the curry paste, TERANA Ground Cumin, coriander, and TERANA Ground Cardamom. Cook for one more minute to blend the flavors.
4. Stir in the coconut milk and season with salt and pepper to taste.
5. Reduce heat and simmer for about 15-20 minutes, or until the chicken is tender and the sauce has thickened.
6. Sprinkle with chopped cashews before serving.
Serve with steamed vegetables or basmati rice.
