Tarragon dressing
Ingredients
● 1 tablespoon TERANA tarragon
● Finely chopped fresh parsley
● 1 spring onion finely chopped
● 3 egg yolks
● 6 tablespoons of vinegar
● 6 tablespoons of white wine
● 100 g melted butter
● Salt to taste
Preparation
1. In a pot over low heat, place the chives, parsley and TERANA tarragon, add the wine and vinegar and let the ingredients merge and the liquid reduce.
2. After a few minutes, strain the juice and let it cool.
3. To add creaminess, place the yolks in a separate deep plate and with the help of a blade mixer, mix carefully. They should increase in size little by little.
4. Add the juice of the mixture and then little by little the melted butter (make sure it is not too hot as the eggs could cook)
5. Season to taste and enjoy!
