Potatoes with cilantro green mojo
Ingredients
1 tablespoon TERANA ground cumin
8 TERANA green peppercorns
1 kg of small potatoes
80 g coriander
200 ml extra virgin olive oil
2 tablespoons of vinegar
1 clove of garlic
1 pinch of salt
Preparation
1. Cook the potatoes in a pot with water for 20 minutes, drain the water and reserve in a deep refractory.
2. Place the well-washed and dried cilantro, garlic cloves, green pepper, ground cumin, salt, vinegar and extra virgin olive oil in the blender.
3. When you have all the ingredients ready, blend with the blender until you obtain a homogeneous sauce.
4. Add the sauce to the potatoes and make sure they are all covered.
