Duchess Potatoes
Ingredients
● TERANA ground black pepper (to taste)
● 500g. potatoes (previously cooked and soft)
● 50g. butter
● Salt
● 1 yolk
● 1 egg (to decorate)
● Pastry bag and baking paper
Preparation
1.Once cooked, remove the skin from the potatoes and in a deep bowl, mash them with a fork and add the butter. Continue mashing until any lumps are removed.
2.Check and adjust the salt and add pepper to taste
3.Separate the white from the yolk of one of the eggs and add the yolk to the potatoes.
4.Stir well until you have a uniform cream.
5.Place a large star-shaped nozzle in a pastry bag and fill it with the potato mixture.
6.On a baking tray, place a sheet of baking paper and make small piles directly on the paper. Brush each one with beaten egg.
7.With the oven previously heated to 200º C, insert the baking tray and set the grill option.
8.The duchess potatoes are ready the moment you see that they are golden brown, in 2 or 3 minutes.
