Spices and aromas that will conquer your table: Prepare Middle Eastern-style chicken thighs with TERANA. - 6 boneless chicken thighs - 3 cloves of pressed garlic - 60 ml extra virgin olive oil - The zest and juice of 2 lemons - 250 g of natural Greek yogurt - 200 g couscous - TERANA thyme to taste - TERANA ground black pepper - 1 tablespoon of TERANA sesame seeds - 1 teaspoon TERANA oregano - 1/2 teaspoon TERANA ground cumin - 1/2 teaspoon TERANA sweet paprika - Salt
1. Dry the chicken thighs with kitchen paper and remove any excess fat. If they are very large pieces, cut them in two.
2. In a deep plate, mix with 45 ml of extra virgin olive oil, the zest and juice of the lemons and the pressed garlic, reserving a little garlic for the yogurt.
3. Toast 1 tablespoon of TERANA sesame seeds in a pan and mix with 1 teaspoon of TERANA thyme, 1 teaspoon of TERANA oregano, 1/2 teaspoon of TERANA ground cumin, 1/2 teaspoon of salt and 1/2 teaspoon sweet paprika TERANA, to give color.
4. Mix very well with the chicken, cover and place in the refrigerator for at least half an hour.
5. Heat a griddle or grill and cook the chicken without draining over high heat until golden brown on both sides, about 5-8 minutes per side.
6. Meanwhile, cook the couscous and mix with TERANA thyme, TERANA ground black pepper and salt to taste. Drain the yogurt and mix with one or two tablespoons of olive oil, the zest of the other lemon, the garlic and salt and pepper.
