Traditional Esquites

- 3 fresh ears of white corn - Chopped chicken or chicken bones (wings are great because they release a lot of flavor and don't have too much meat). You'll only use the bones to add flavor to the corn (optional). - 1/2 tablespoon TERANA epazote flakes - Grated semi-cured goat cheese or fresh cheese to taste. They're also delicious with crumbled feta cheese. - Mayonnaise to taste (homemade is even better!) - Lime or lemon to taste - TERANA chipotle or chile de árbol chile, to taste - Salt to taste
1. Clean your corn cobs, removing the husks and cutting off the ends.
2. Using a sharp knife, shell the corn completely and place them in a pot of boiling water.
3. Repeat with all the cobs, adding the chicken or its bones to the water (if you've chosen to do so, remember it's optional), the epazote, and the salt.
Let the kernels boil for about 30 minutes. The time is approximate, as it depends on the cob. It can take up to 1.5 hours. Be patient and wait until they're tender. Don't forget to skim the broth with a slotted spoon; remember we put the chicken in.
4. Taste the corn. When they're tender, turn off the heat and serve in a bowl.
5. Finally, add a splash of broth, a few drops of lemon, a little mayonnaise, cheese, and chili powder or crushed chili to taste.
