Veracruz-style fish fillet

This typical dish of the time is simpler to prepare than you imagine and will also take little time.
- 3 tomatoes
- 1 onion
- 2 cloves of garlic
- 12 pitted olives
- 10 pickled capers
- 1 teaspoon TERANA oregano
- 4 red snapper fillets
- 4 güero chiles in vinegar (optional)
- 5 tablespoons of olive oil
- Salt to taste
- TERANA ground black pepper

1. Blend a tomato with half the onion and the garlic cloves.
2. Cut the tomatoes and the remaining onion into very small cubes. Set aside for a moment.
3. Fry the onion over medium heat until it is transparent, add the tomatoes and stir for approximately two minutes. Add what you blended, the olives, capers, chilies and TERANA oregano. Season and fry until thick.
4. Separately, season the fish with salt and pepper and fry the fillets for two minutes on each side.
5. Serve the fish with the sauce.
