Cooking time: 10 minutes. Serves 4. Ingredients: - 4 corn and cactus tortillas - 80g Oaxaca cheese or quesillo cheese - 1/4 sliced white onion - Terana epazote flakes to taste - Squash blossoms to taste - Pinch of salt
1. Grill the cheese, sliced onion, and squash blossom, and sprinkle the epazote on top. There's no need to add oil; the whey from the cheese is enough to cook everything without it sticking.
2. Cook over medium heat until the cheese is slightly golden and melted, and the onion is translucent. Add salt at this point.
3. Heat the tortillas over low heat. When they're pliable, flip them over, and on the previously heated side, add the cheese and vegetables. Fold them over and cook until toasted to your liking. You can add a few drops of oil to make them golden and firmer.
4. Serve immediately and serve with your favorite salsa.
