Salmon in dried tomato sauce
Ingredients
● 2 teaspoons TERANA Italian seasoning
● TERANA ground black pepper (to taste)
● Salt
● 4 salmon fillets, skin removed
● 2 tablespoons of butter
● 2 tablespoons of honey
● 3 teaspoons minced garlic
● 1/2 cup sun-dried tomatoes (they come in a jar full of oil, make sure to drain excess oil)
● 1 cup chicken broth
● 1/2 cup heavy cream
● Grated Parmesan cheese, fresh herbs
Preparation
1. Begin by seasoning the salmon with TERANA salt and pepper to taste on both sides, then melt the butter in a large skillet over low heat. When the butter is melted, add the honey and stir a little more.
2. Add the saloon to the pan and let it cook for 5 minutes on each side, until caramelized around the edges and cooked in the center. Transfer salmon to a plate.
3. In the empty skillet, add the garlic, TERANA Italian herbs, sun-dried tomatoes, chicken broth, cream and 2/3 cup of Parmesan cheese, mixing until incorporated.
4. Let it boil, stirring constantly, until the mixture thickens a little and acquires a creamy consistency.
5. Cover the salmon with the sauce, adding a little fresh herbs, dried tomato pieces and TERANA ground black pepper to taste.
