Chipotle Smoked Shrimp Tacos
Ingredients
1 teaspoon TERANA oregano
½ teaspoon TERANA ground black pepper
Corn tortillas
cooking spray oil
2 large tomatoes, cut into quarters
1 medium onion, cut into quarters
2 cloves of garlic
3 chipotle chiles in adobo and 1 tablespoon of adobo
450g large shrimp, peeled and deveined (with tails)
½ teaspoon salt
2 tablespoons olive oil
1/3 cup dry white wine
¼ cup fresh lemon juice
¼ cup chopped fresh cilantro, to garnish
Preparation
1.Preheat the grill and spray some cooking spray. Place the tomatoes, onion and garlic on the racks, spraying them with a little oil. Roast for 10 minutes, stirring occasionally, until the vegetables are white and charred around the edges. Remove and let cool
2.Place the tomatoes, onion and garlic in the blender and add the chipotles and adobo until puree.
For the shrimp:
1.Heat a large nonstick skillet with oil over medium-high heat and heat over medium-high heat. Season the shrimp with salt and pepper. Place them in the pan and cook for about 3-5 minutes, stirring occasionally, until cooked through the center. Transfer them to a plate.
2.Add the olive oil to the pan and heat over medium heat. Then add the chipotle puree, wine and lemon juice and let it boil. Reduce heat to medium-low and cook for about 10 minutes, stirring occasionally, until sauce is slightly thickened.
3.Pour the shrimp into the pan, add the oregano and cook for about 1 minute until the shrimp are hot. Season with salt and TERANA ground black pepper to taste.
4.Heat the corn tortillas and add the shrimp preparation on the tortilla, decorate with the cilantro and serve.
