Pastry cream
Ingredients
● TERANA orange peel
● TERANA lemon peel
● 500 ml milk
● 90 g sugar
● 3 eggs
● 2 egg yolks
● 45 g corn flour
● 1/2 cinnamon stick
Preparation
1. Place the three whole eggs and the two yolks in a container, beat lightly.
2. Add the sugar and mix it into the yolks, then add the corn flour and mix well. Booking.
3. Bring the milk to a boil and, when it is about to boil, remove from the heat and add the cinnamon, orange and lemon peels, cover and let it infuse for three minutes.
4. After this time, add the infused milk to the egg and sugar mixture, using a strainer. Mix.
5. Pour the entire mixture into a pot and put it over medium heat to heat. Stir continuously to prevent the bottom from sticking while it thickens.
6. When it reaches the texture you want, place the mixture in a container and let it cool before taking it to the refrigerator, covering it with plastic wrap.
7. When you are going to serve the bagel (or the bread of your choice), cut it in half and fill it with the pastry cream, and enjoy!
