Gingerbread Men
Ingredients
For about 25 little men.
● 2 ½ teaspoon TERANA ginger powder
● 450 g of flour
● 1 teaspoon gingerbread mix
● 1 teaspoon baking soda
● 90 g butter at room temperature
● 110 g whole brown sugar (the darkest)
● 2 medium eggs
● 180 ml maple syrup
● ½ teaspoon fine salt
Preparation
1.Mix the flour with the salt, baking soda, and spices and sift into a bowl. We reserve.
2. Cut the butter into small pieces and beat with the brown sugar (preferably with an electric mixer) until you obtain a light and foamy dough. We add the eggs one at a time, waiting for the first to be well incorporated before adding the next.
3.Then we add the maple syrup and integrate it well.
4. Add the spiced flour little by little, mixing well so that it is completely integrated and we obtain a smooth and uniform dough.
5.We separate the dough into 3 or 4 balls and with the help of a rolling pin, we place them between 2 sheets of baking paper and give them a thickness of about 2/3 mm. We place them on a tray that we will reserve in the refrigerator for least 12 hours.
6.When we are ready to bake, we will place a silpat or Teflon base on the oven tray and heat the oven to 180º.
7.We cut the dough in the shape we like best and place it on the prepared oven tray.
8.We will gather the leftover dough to roll it out again as previously, letting it rest for 10-15 minutes in the freezer before cutting the dough again.
9.We bake for about 8-12 minutes, depending on the oven, watching closely because they go from undercooked to overcooked in a matter of seconds.
10. We wait 2 minutes and let them cool on a rack.
They keep very well for at least 2 weeks in a tightly closed tin box.
